The harvest is manual, and the grapes are pressed directly. The must is then transferred straight into double barrels (500 Liters) for a long fermentation. The wine will remain on its big lees for approximately 18 months before being bottled. This is truly gastronomical wine: its roundness, fullness and fruitness will marry perfectly with crustaceans, such as crab, lobster or scallops. It will also work wonderfully with other fish and meats, and can cope with anything that is slightly spiced. Don't hesitate to drink Le portail alongside a cheeseboard.
