Cuvee des Jacobins Prestige Sour Ale
To create this special beer, they brewed a beer of spontaneous fermentation, let it cool down during one night in the open-air cooling vessel in the brewery tower and then pumped it into the oak barrel. There it has been fermenting and maturing for 18 months. The Cuvée Des Jacobins Prestige is manually filled in kegs, directly from the foeder, to maintain its unique characteristics. Quality Manager Sam Quartier describes the Cuvée Des Jacobins Prestige as a fruity, complex and lightly sour beer of spontaneous fermentation. It contains an alcohol volume of 7,6% and has a beautiful amber color.
