I’ve sold cheese professionally for quite some time now. I’ve seen countless cheeses come and go across our counter, and I’ve been privileged to be able to try every single cheese that we’ve carried in our shop (and many others that didn’t quite make the cut!). Cheese is an incredible thing: a sustainable agricultural product that carries a rich history, expansive culture, and an awesome industry of like-minded individuals—I try to not take it all for granted. However, like many things in life, what once always sparked excitement and novelty now occasionally fades into the mundane.
 
Every once in a while, a cheese comes across our counter that re-ignites my excitement and takes me back to those first few years in the industry. Most recently, that cheese was Acapella, a relatively unassuming, soft goat milk cheese from Andante Dairy in Petaluma, California. I’d heard great things about their cheeses, so I took the plunge and bought a wheel of Acapella to try for myself. Immediately, I felt that spark once again. This cheese was perfect. Acapella embodies elegance; the texture, aroma, and flavor sit in perfect balance. I quickly ate the entire wheel, and I felt ecstatic to do it, and I’m ecstatic to do it again. This week, stop by our counter to check out Andante’s cheeses for yourself. Hopefully, you’ll feel that same spark of excitement, too.
