    One of our absolute favorite pairings is cider and cheese. Our selection of English farmhouse cheeses is one of the best in the country and we absolutely love pairing them with strong ciders. Our cheese buyer spent two weeks in England this summer and is brimming with knowledge. This is sure to be one of the tastiest and most educational classes we will offer all year.

    Our favorite Frenchman is back in town! Join us for an extra-special Champagne class, hosted by the one and only Clement Calleja of Billecart-Salmon. This world-class bubbles producer is one of the few remaining Champagne houses to be owned by the original family since it was established in 1818 by Nicolas-Francois Billecart. Clement will pour through an incredible line-up of Champagnes as he delves into the history, tradition, technique, and commitment to excellence of Billecart-Salmon. This not-to-be-missed event is the perfect way to ring in the holiday season... as well a great excuse to do some "research" for your Thanksgiving, Christmas, and New Years bubbles!

    Reinventing the Wheel: Exploring the Synergy Between Wine and Cheese with Bronwen Percival and Francis Percival In its capacity to reflect the farming decisions made on every scale from the macro to the microbiological, sensitively-made raw milk cheese can be even more terroir-expressive than wine. In this tasting, authors Bronwen and Francis Percival will explore ideas with immediate resonance to anyone who loves wine: the importance of biodiversity, working with indigenous microbes, and making a product that allows us actually to taste the difference that comes from sustainable agriculture. The cheeses we taste will demonstrate the work of cutting edge cheesefarmers, both in the USA and abroad.
