This salty, snappy white wine is the perfect bottle to pop the cork on as the seasons are changing and the weather is oscillating between extremes. It is produced by Tosca Cerrada in Spain’s sherrymaking region, and the grapes are grown on chalky soils that enhance their minerality.
Mario Rovira, the winemaker, lets the Palomino Fino grapes rest in stainless steel under a thin layer of flor for six months, so that this bottling tastes like a fresh interpretation sherry without the fortification. I am always looking to find another pairing for oysters and drinking a wine that tastes of the Mediterranean with lemony, briny almond notes feels just right.
