Say it with us: “ree-kaht-say-TAY-lee.” This ancient grape—many sources date it back to 3000 BC!—calls Eastern Europe home, originating in places like Greece, Georgia, and Macedonia. In its beginnings, it would be stored in large clay amphorae and sealed with pitch, and would usually be either fortified to make a sweet wine or be mixed with herbs, spices and botanicals. Today, most Rkaciteli is vinified dry, floral, and minerally. With aromas of stone fruits, granite, and fresh lemon-lime, this unique white wine has enough acidity to balance out any cheese plate or fish dish, or can do just as well on its own.
